Make Memere Rousseau's Tourtiere by simmering 2 pounds of ground pork, 1 minced medium onion, 1 teaspoon of salt and 2 cups of water in a saucepan at medium-low for up to four hours. Once the liquid evaporates, add 1 teaspoon of cinnamon, 1 teaspoon of ground cloves and 3 cups of mashed potatoes. Pour the meat mixture into a pie crust, and top the pie with a second crust. Pinch the edges together to create a seal, and brush the pastry with 1 tablespoon of milk. Bake the tourtiere at 400 degrees Fahrenheit for 30 minutes.
To make Classic French Canadian Tourtiere, saute 1 minced onion in 2 tablespoons of olive oil for 10 minutes, and then add 1 pound each of ground pork and beef. Cook the meat for 10 more minutes, and stir in 1 cup of mashed potatoes, 3/4 cup of beef broth, 1/4 teaspoon of pepper and 1 teaspoon of salt. Season the mixture with 1/2 teaspoon of ground cinnamon, 1/2 teaspoon of ground nutmeg and 1/2 teaspoon of ground cloves, and simmer everything for 30 minutes before chilling it for at least two hours. Spoon the cooled mixture into a pie shell, and add another shell on top. Brush the top pastry with an egg wash, and bake the pie at 375 degrees Fahrenheit for 50 minutes.
