A good recipe for Filipion Ube cake requires 1 3/4 cups of all purpose flour, 1 teaspoon of baking powder, 1/4 teaspoon of baking soda, 1/2 cup of unsweetened ube powder and 1/4 teaspoon of salt. Blend these items together in a large bowl.
After blending, add 1 cup of sugar, 2 eggs and 1/2 cup each of milk, yogurt and butter. Add 1 teaspoon of ube extract to the batter for flavoring. Mix the batter lightly, stirring just until the flour disappears. Pour the batter into two greased and floured 6-inch cake pans. Bake at 350 degrees Fahrenheit for 40 to 45 minutes or until the tops of the cakes are lightly browned. Remove the cakes from the oven, and allow them to cool.
To make the frosting, gradually beat 2 cups of confectioner's sugar into 1 cup of softened, unsalted butter. Add 3 teaspoons of ube extract, and set the frosting aside. Once the cakes are completely cool, level them if necessary, and split each cake in half to make a total of 4 layers. Spread 1/3 cup of frosting between each layer, and frost the top and sides. To garnish, top the cake with 1/3 cup of macapuno. Decorate the cake by piping stars around the top edge of the cake with any remaining frosting.
