To make the dish, combine 3 pounds of ground chicken, 1 large minced green bell pepper, 1 large minced red bell pepper, 1 large minced onion and 1 cup raisins in a large mixing bowl. Add 1 8-ounce can of tomato sauce, 1 cup minced carrots, 1/4 cup of sweet relish and 3/4 cup of sharp cheddar cheese to the mixture. Mix the ingredients well.
Pour in 1/4 cup of olive oil, 1/2 teaspoon ground black pepper and 1 teaspoon salt. Stir again to incorporate the ingredients, and then add 1 1/2 cups of bread crumbs and 3 eggs. Mix again until the ingredients are well blended.
Wrap 1 to 1 1/4-cup servings of the mixture in aluminum foil. Continue wrapping until you wrap all of the mixture. Arrange the foil packets in a steamer, and steam the packets for 45 to 60 minutes. Remove the packets, and allow them to cool, or place them in the refrigerator.
Slice the meatloaves, and arrange them on serving plates. Serve the meatloaf chilled.Learn more about Meat
