Beer and Chipotle Fish Batter
This easy batter is intended for use in Michael Chiarello's Beer and Chipotle-Battered Fish Tacos, but can be used for any fried fish recipe.

- 2 ounces canned chipotle peppers
- 2 eggs
- 2 cups pale beer
- 2 cups all purpose flour
- 2 tablespoon cornstarch
- 2 teaspoon baking powder
- 2 teaspoon gray salt
- Freshly ground black pepper
- Prepare chipotle and beer mixture
- Prepare dry ingredients
Puree the chipotle peppers and eggs in a blender until thoroughly combined. Place into a bowl and whisk in the beer.
In another bowl, mix the flour, cornstarch, baking powder and salt.
Place the beer and chipotle mixture into the bowl with the dry ingredients and whisk thoroughly until smooth. Add the freshly ground black pepper and set batter aside until ready to fry fish. When ready, coat fish with the batter and place in a skillet with oil to a depth of up to 2 inches and set over a heat of 350 F until golden brown.
