An easy, good recipe for making Eagle Brand microwave fudge calls for 3 cups semi-sweet chocolate chips, one 14-ounce can Eagle Brand condensed milk, a dash of salt and 1 1/2 teaspoons vanilla extract. One optional ingredient is 3/4 cup chopped nuts.
Line an 8- or 9-inch square pan with waxed paper and set aside. Put chocolate chips, condensed milk and salt into a 1-quart microwaveable measuring cup or bowl. Microwave at 100 percent power for 1 1/2 minutes. Stir the mixture, and continue cooking for another 1 1/2 minutes or until the chips melt completely. Stir in the vanilla and the nuts (if desired). Spread the mixture evenly into the prepared square pan, and chill for two hours or until the fudge is firm. Remove the fudge from the pan, and place it on a cutting board. After peeling away the waxed paper, cut the fudge into squares, and keep them refrigerated.
One variation to this recipe calls for melting 2 cups of miniature marshmallows with the chocolate chips and condensed milk. Another replaces 1 cup of the semi-sweet chocolate chips with 1 cup of milk chocolate chips.
If a microwave is not available, the chips and condensed milk can be melted in a saucepan on the stove over low heat. When the chips are melted, stir in the vanilla extract and nuts, and proceed as directed.
