Giada De Laurentiis from the Food Network offers a good recipe for deep-fried zucchini. The recipe takes approximately 25 minutes to prepare and cook, and it yields four servings.
To prepare the recipe, pour olive oil into a large frying pan until it is 2 inches deep. Heat the pan over medium heat, using a deep-fry thermometer to see when it reaches 350 degrees Fahrenheit. In a medium-sized bowl, stir together 1 1/2 cups panko, 1 1/2 cups Parmesan and 3/4 teaspoon salt. Whisk 2 large eggs in a separate bowl. Cut 3 medium zucchini into strips measuring 1/2 inch wide by 3 inches long, and dip them into the eggs to coat them completely. Gently shake off the excess egg before placing the zucchini into the Parmesan bread crumb mixture, patting each piece to help the crumbs stick.
Place the prepared zucchini on a baking sheet, and fry batches of the strips in the hot oil for approximately three minutes, or until they turn golden brown. Use a slotted spoon to remove the zucchini, placing the strips on a layer of paper towels to drain. Place the strips on a plate to serve, and sprinkle them with another 1/4 cup Parmesan.
