Food Network's creamy mashed potatoes by Alton Brown is a good mashed potato recipe and takes approximately 40 minutes to prepare and cook. This easy dish makes four to six servings.
To prepare the recipe, begin by peeling 2 pounds Yukon gold potatoes, and cut them into 1/2-inch chunks. Place the potatoes into a 4-quart saucepan, and pour cold water over them until at least 1 inch of water stands above the potatoes. Place the lid on the pan, and bring the water to a boil over high heat. Once it begins to boil, reduce the heat to a simmer and remove the lid, cooking for an additional 15 to 20 minutes or until a fork or knife easily pierces the potatoes.
Use a colander to thoroughly drain the potatoes, and set them aside while placing 1/2 cup heavy cream, 4 ounces unsalted butter, 1 teaspoon salt and 1/4 teaspoon freshly ground black pepper into the empty saucepan. Heat the mixture just enough to melt the butter. Fit a food mill with its smallest die, and place it over the saucepan. Pour the potatoes into the mill 1 cup at a time, and stir them with the other ingredients until combined. Serve the dish hot.
