A good creamy broccoli soup should contain plenty of cream, butter, broth and veggies like potato and broccoli. The additional use of a food processor blends all of the ingredients to a smooth consistency.
Creamy Broccoli Soup:
- 2 tbsp., butter
- 1/2 c., cream
- 1qty.,chopped onion
- 1 qty.,peeled and chopped potato
- 6 c., chicken stock
- 3 c., chopped broccoli
- Salt, pepper and nutmeg
Step 1: Melt the 2 tbsp. butter in a large pot over medium high heat. Add the onion and simmer until it is tender. Throw in the potatoes and stir until they are thoroughly coated in butter.
Step 2: Warm up the 6 cups of chicken stock and add to the large pot. Bring the mixture to a simmer. Add the 3 cups of broccoli. Continue to simmer until the broccoli and the potato are cooked. The broccoli should turn a bright green shade when done. Both potato and broccoli should become tender too.
Step 3: Take the soup to the food processor and blend it until smooth. It may be necessary to puree the soup in batches, depending on the food processor's size.
Step 4: Pour the soup back into the large pot. Stir in the 1/2 cup of cream. Heat back up and season with the salt, pepper and nutmeg to taste.
