Creamed cauliflower is made with a mixture of cauliflower, milk, garlic, olive oil, butter and seasoning. It makes a good low-carbohydrate substitute for mashed potatoes.

- 1 head of cauliflower
- 4 cloves garlic
- 1/3 cup non-fat buttermilk
- 4 tsp olive oil
- 1 tsp butter
- 1/2 tsp salt
- Pepper and herbs to taste
- Prepare the vegetables
- Steam the vegetables
- Blend the vegetables
- Finish the creamed cauliflower
Cut the cauliflower into 8 cups of small florets. Peel and crush the garlic.
Steam the cauliflower and garlic for 12 to 15 minutes in a steamer or for 3 to 5 minutes in the microwave.
Mix the steamed cauliflower and garlic in a food processor. Add the milk, 2 tsp of the olive oil, butter, salt and pepper and blend thoroughly.
Add the creamed cauliflower to a serving bowl and sprinkle with 2 tsp of olive oil. Sprinkle the top with fresh herbs such as chives.
Add fresh herbs or cheese to the creamed cauliflower to add some additional flavor.
