What Is a Good Recipe for Creamed Cauliflower?

Creamed cauliflower is made with a mixture of cauliflower, milk, garlic, olive oil, butter and seasoning. It makes a good low-carbohydrate substitute for mashed potatoes.

Creamed Cauliflower

  • 1 head of cauliflower
  • 4 cloves garlic
  • 1/3 cup non-fat buttermilk
  • 4 tsp olive oil
  • 1 tsp butter
  • 1/2 tsp salt
  • Pepper and herbs to taste
  1. Prepare the vegetables
  2. Cut the cauliflower into 8 cups of small florets. Peel and crush the garlic.

  3. Steam the vegetables
  4. Steam the cauliflower and garlic for 12 to 15 minutes in a steamer or for 3 to 5 minutes in the microwave.

  5. Blend the vegetables
  6. Mix the steamed cauliflower and garlic in a food processor. Add the milk, 2 tsp of the olive oil, butter, salt and pepper and blend thoroughly.

  7. Finish the creamed cauliflower
  8. Add the creamed cauliflower to a serving bowl and sprinkle with 2 tsp of olive oil. Sprinkle the top with fresh herbs such as chives.

Add fresh herbs or cheese to the creamed cauliflower to add some additional flavor.
