To make it, saute chopped celery, carrots and onion in butter for five to 10 minutes. Add chicken broth, chicken bouillon, thyme and poultry seasoning to the vegetables, and bring to a boil. Add cooked chicken and egg noodles, and turn the heat to low. Simmer for about 20 minutes. Garnish with parsley and serve.

To make minestrone, saute white onion, minced garlic, Italian cut green beans, minced celery and chopped zucchini in olive oil for five minutes. Add vegetable broth, hot water, dried tomatoes, red kidney beans and white beans. To this add julienne carrots, parsley, oregano, basil and thyme. Add salt and pepper to taste. After bringing the soup to a boil, reduce the heat, and simmer for approximately 20 minutes. Add fresh baby spinach and small shell pasta, and cook for an additional 20 minutes, or until it reaches the desired consistency.
For those who are fans of Asian food, miso is a simple Japanese clear soup that serves well as an appetizer for sushi or sashimi. It is easy to make, and requires minimal preparation. Simply stir dashi granules into water, and bring to a boil; reduce heat to medium, and whisk in miso paste. Stir in diced tofu and green onions, and simmer for two to three minutes before serving.
