To make the brown sugar frosting, melt 1/4 cup butter and 1/2 cup brown sugar until the mixture bubbles. Remove from heat. Beat in 2 tablespoons milk and 1 3/4 cups confectioners' sugar, and mix until smooth.
For a shortcut, try using a boxed cake mix. Add 2 large eggs, 1 1/3 cups water, and 1 cup mayonnaise to a box of devil's food cake mix in a bowl. Mix, and add in 1 cup chocolate chips. Pour into a pan, and bake for 35 minutes at 350 degrees Fahrenheit. Decorate with a frosting of your choice.
To make a vegan version of chocolate mayonnaise cake, try cupcakes made with Vegenaise or other vegan mayonnaise. Combine 1/2 cup flour, 3 tablespoons cocoa powder, 1/4 teaspoons baking soda, 1/4 teaspoons salt, and 1/2 cup sugar. In another bowl, mix together 1/4 cup vegan mayonnaise, 1 1/2 teaspoons vanilla extract and 1/3 cup plus 1 tablespoon water. Combine the contents of the two bowls, and place into six muffin cups. Bake 21 minutes at 350 degrees Fahrenheit.
