A good recipe for chicken stew consists of placing chicken, vegetables and spices into a slow cooker and cooking on low for eight hours. After cooking the chicken and vegetables, the liquid is turned into a creamy broth before serving.
Into a slow cooker, place 2 cups of chopped carrots, two chopped potatoes, 1/2 cup of chopped onions, and 1/2 cup of chopped celery. Sprinkle the vegetables with 1/2 teaspoon of thyme, 1/4 teaspoon of salt and 1/4 teaspoon of pepper. Add 1 pound of boneless, skinless chicken thighs to the slow cooker and pour 1 1/2 cups of chicken broth over the chicken. Cover and cook on low for eight hours or until the chicken and vegetables are tender and fully cooked.
Remove the chicken and vegetables from the slow cooker with a slotted spoon and set aside. Increase the temperature of the slow cooker to high and add 1/2 cup of heavy cream, 1/4 cup of flour and 1/2 teaspoon of thyme. Cover and cook for 10 minutes or until the broth has thickened. Return the vegetables and chicken to the slow cooker and serve immediately. Alternatively, the thickened broth may be poured over the chicken and vegetables in a serving dish.
