To make Chicken Florentine Style, season four boneless skinless chicken breasts with salt and pepper. Coat the chicken in flour, making sure to shake off any extra flour. In a large skillet, melt 2 tablespoons butter, then add the chicken and cook five minutes on each side. Move the chicken to a plate tented with foil to keep it warm.
In the same skillet, melt another 2 tablespoons butter, then add 2 tablespoons sliced shallots and 1 tablespoon chopped garlic. Cook for one minute. Stir in 1 1/2 cups dry white wine and bring the mixture to a boil. Boil the wine mixture until the liquid reduces by half. Then, stir in 1 cup whipping cream and boil for an additional three minutes. Add 1 tablespoon fresh parsley, and salt and pepper to taste, then add the chicken to the sauce.
Melt another 2 tablespoons of butter in a separate large skillet. Once the butter is melted, add two 10-ounce packages of thawed frozen spinach. Cook the spinach until heated through, and add salt and pepper to taste. Place the spinach on a serving platter, and top with the chicken.
