To make this soup, combine three cups of chopped, cooked chicken breast, two eggs, 3/4 cup of chicken broth, one cup of all-purpose flour, and 1/4 cup fresh, chopped parsley in a blender or food processor. Add two teaspoons salt, 1/8 teaspoon black pepper and1/2 teaspoon dried tarragon. Blend all ingredients until they are smooth.
Next, bring four cups of chicken broth to a boil in a large pot. Drop rounded spoonfuls of the dumpling mixture into the boiling broth. Simmer uncovered for five to eight minutes, until the dumplings are slightly browned. Remove them with a slotted spoon and drain on paper towels. Set aside the cooking liquid.
Melt 1/4 cup butter in a large pot over a medium heat. Cook two cups of chopped onion, one-and-a-half cups of thinly-sliced celery and two cloves of minced garlic until the onion is translucent. Stir in 1/2 cup flour and two quarts of chicken broth, bringing the mixture to a boil. Add one-and-a-half teaspoons of salt and one-and-a-half cups of chopped carrots. Cover and simmer for fifteen minutes.
