To make cauliflower mashed potatoes, cut the florets off a head of cauliflower, and chop the stem into small pieces. Boil the cauliflower in a cup of water for 10 to 15 minutes, and drain the water. Mix 3 tablespoons milk, 2 tablespoons sour cream, 1 tablespoon butter, 1/4 teaspoon garlic salt and black pepper into the cauliflower, and mash the ingredients together with a potato masher until the cauliflower reaches the desired consistency. Top the mashed cauliflower with chives.
Another option is to chop a head of cauliflower into small pieces, and then cook the cauliflower in a pot of boiling water for six minutes or until the cauliflower is soft. Drain the cauliflower, and pat it dry between several paper towels while it is hot.
Add 1 tablespoon cream cheese, 1/4 cup grated Parmesan cheese, 1/8 teaspoon chicken base or chicken bullion, 1/2 teaspoon minced garlic and 1/8 teaspoon black pepper to the cauliflower. Mix the ingredients together in a food processor. Before serving, sprinkle the cauliflower with chives, and top with butter if desired.
Alternately, roast the garlic prior to adding it to the cauliflower, and sprinkle rosemary into the cauliflower before mixing in the food processor. If chicken base isn't available, substitute the chicken base with 1/2 teaspoon of salt.
