Good recipes for butterscotch pie are Butterscotch Pie from Cooking Light and the Food Network's Butterscotch Pie. Basic ingredients include evaporated milk, brown sugar, eggs, milk and flour.
To make Butterscotch Pie from Cooking Light, whisk together 1 cup of all-purpose flour, 1 tablespoon of powdered sugar and 1/4 teaspoon of salt, and add in 3 1/2 tablespoons of vegetable shortening. Mix in 3 tablespoons of ice water and 3/4 teaspoon of cider vinegar with a fork, and knead the dough into a disk. Chill it wrapped for one hour before rolling it out into a round sheet and placing it in a pie plate. Bake the crust at 400 degrees Fahrenheit for 20 minutes.
Meanwhile, cook 2 tablespoons of melted butter and 3/4 cup plus 2 tablespoons of dark brown sugar in a saucepan for two minutes, and then stir in 1/4 cup of evaporated milk. After bringing the mixture to a boil for 30 seconds, remove it from the stove. Whisk together 3/4 cup of evaporated milk, 1/3 cup of cornstarch, 1/8 teaspoon of salt, 3 egg yolks and 2 cups of two-percent milk heated to 180 F. Combine the egg yolk mixture and the brown sugar mixture, and heat everything at medium for 11 minutes until the mixture thickens. Stir in 2 teaspoons of vanilla extract.
After cooling the butterscotch filling in an ice bath for 20 minutes, pour it into the crust, and chill the pie for at least eight hours. Serve it with whipped topping.
