To make bruschetta chicken in a skillet, start by draining off the liquid from a 14.5-ounce can of diced tomatoes before mixing the tomatoes with 3/4 cup of shredded Italian-blend cheese and 1/4 cup of chopped fresh basil. Flatten 5 skinless chicken breast fillets into a 1/2-inch thickness, and spread the tomato mixture on top of the chicken breasts. Cook 1 teaspoon of chopped garlic with 8 ounces of tomato sauce in a skillet. Place the chicken fillets into the skillet, and bring the sauce to a boil before lowering the heat, covering the skillet, and allowing the mixture to simmer for approximately 15 minutes or until the chicken is done. Serve the chicken with a sprinkling of lightly crushed croutons on top.
To make grilled bruschetta chicken, toss 1 finely chopped tomato with 1/2 cup of shredded mozzarella cheese, 1/4 cup of chopped fresh basil and 2 tablespoons of sun-dried tomato vinaigrette dressing in a bowl. Marinate 4 small skinless chicken breast fillets in another 2 tablespoons of the dressing for 10 minutes, and then grill the fillets on one side for six minutes before turning them over, placing them on foil and applying the tomato mixture on top.
