A good recipes for a brined turkey is Out of This World Turkey Brine, which calls for 2 gallons of water, 1/4 cup of Worcestershire sauce, 1 1/2 cups of canning salt, 1/3 cup of brown sugar and 3 tablespoons of minced garlic. To make it, place a turkey along with all the ingredients in a large container, and soak the turkey in the mixture for up to two days.
To make another good brine, add 2 gallons of cold water and 3 cups of apple cider to a pot, and bring it to a boil along with 2 cups of packed brown sugar, 3/4 cup of kosher salt, 3 tablespoons of tricolor peppercorns, 5 whole bay leaves and 5 minced garlic cloves. Stir in the peels of 3 oranges, and then allow the mixture to cool completely before pouring it over a turkey. Brine the meat for up to 24 hours. Rinse off the turkey completely before roasting it.
Make a Cajun-flavored brine by mixing together a spice mixture made from 1/2 cup of Spanish paprika, 1/4 cup of New Mexican chile powder, 1 1/2 teaspoons of chile de arbol, 1/2 teaspoon of cayenne pepper, and 1 tablespoon each of garlic powder, onion powder, dried oregano and dried thyme. Mix all the spice mixture minus 1/4 cup in 2 gallons of cold water with 1 1/2 cups of kosher salt and 1/4 cup of light brown sugar. Once the water and salt dissolves, add the turkey, and refrigerate everything for 24 hours before rinsing off and cooking the turkey.
