To start, cut about a pound of chuck beef meat into 1-inch pieces. Simmer in a large pot of water with a dried bay leaf and a whole onion without its peel. While the pot simmers, roast three large beets in the oven until soft and then set aside to cool. Peel the beets and cut them down into bite-size pieces. When the beef is cooked and tender to the touch, remove the onion from the pot and set aside to cool. Once cooled off, cut the onion into thin slices and return to the pot.
Next, add two cans of sauerkraut pickled cabbage to the pot along with the juices from the cans. Add a small can of tomato paste and the beats, stirring to combine the ingredients. When the mixture becomes bright red in color, add a cup of light brown sugar and stir until it is fully dissolved. Season the borscht to taste with salt and pepper, and continue to simmer for about 15 more minutes.
