The Basic Pizza Sauce recipe by Don Pintabona from Food Network's Cooking Live calls for 1 can (28 ounces) of whole tomatoes, 1 small onion, 1 garlic clove, 3 to 4 fresh basil leaves and 1 teaspoon oregano. It also calls for pinches of salt, pepper and sugar to taste.
To prepare the sauce, pour the tomatoes into a mixing bowl, and begin crushing them with a fork. Do not crush them too much, as you want the sauce to remain chunky. Next, dice the small onion, and heat a saucepan with 2 tablespoons olive oil over medium-high heat. Add the onions to the sauce pan, and sauté until the onions are translucent.
Once the onions have softened up, mince the garlic, and add it to the saucepan as well. Sauté both the garlic and onions until light brown. Keep these ingredients in the saucepan, and add the crushed tomatoes. Stir the mixture constantly, and allow it to simmer. Once the tomato mixture is simmering, add the fresh basil, dried oregano, salt and pepper.
If the tomatoes are tart, add some sugar to better bring out their flavor. Let the sauce simmer on low heat for around 15 minutes before consuming. The recipe makes about 3 cups of sauce.
