In a small bowl, mix together 1/4 cup of olive oil, 1 teaspoon of marjoram, 1 teaspoon of thyme, 1/2 teaspoons of salt and 1/4 teaspoon of pepper. Grate 1 teaspoon of lemon rind, and add it to the oil mixture. Cut the rest of the lemon into quarters, and insert into the cavity of the chicken.
Put the chicken in a baking dish breast side up, and brush with the oil mixture. Stick a meat thermometer into the largest part of the thigh. Bake uncovered for 45 minutes before adding 6 new potatoes, halved, 1 cup of baby carrots and 1/2 pound of green beans to the dish. Return the baking dish to the oven, and cook for an additional 45 minutes or until the vegetables become tender, the temperature of the chicken reaches 180 degrees Fahrenheit, and the juices run clear.
Remove the chicken from the oven, and allow it to sit for 15 minutes for easier carving. Transfer chicken and vegetables to a serving platter, and serve the pan drippings with the meal.Learn more about Cooking
