To bake sliced potatoes in the oven, cut two baking potatoes, either Russets or Yukon Golds, into 1/4-inch slices. Drizzle them with olive oil, or your cooking oil of choice. Sprinkle the slices with salt and pepper to taste. Place the potatoes on a ungreased baking sheet and bake in an oven preheated to 450 F for 25 minutes. This recipe serves two.
Alternatively, for blend olive oil, coarse salt and pepper in a bowl. Add 2 teaspoons of fresh thyme. Place the potato slices in the bowl and toss until coated. Then, arrange them on a lightly oiled baking sheet and bake them in an oven preheated to 400 F for 30 minutes or until golden brown.
For cheesy, bacon-topped baked potato slices, set aside 1/2 cup of shredded cheddar cheese and five slices of cooked and crumbled bacon. Then, slice two large baking potatoes into 1/2-inch slices. Coat the slices with olive oil, salt and pepper. Arrange them on a baking sheet and place them in an oven preheated to 375 F. Bake each side of the slices until golden brown. Allow 15 to 20 minutes for each side. Remove the potato slices from the oven.
Top one side of each potato slice with shredded cheese and bacon and return them to the oven for about five to 10 more minutes. Sprinkle on chopped green onions or chives, and serve warm with sour cream.
