The baked pecan yams recipe from WholeFoodsMarket.com is an excellent recipe for baked yams. It calls for 4 yams, 2 tablespoons of butter, 1/4 cup of orange or pineapple juice, 1 cup of pecans, 1/4 cup of maple syrup and 1/2 teaspoon of cinnamon.
Scrub the yams until they are clean, then poke holes in them using a fork. The holes allow steam to escape from the yam while it is being baked. Not poking holes in the yam could cause it to explode in the oven.
Next, bake the yams in the oven at a temperature of 400 degrees Fahrenheit for approximately 1 hour. When done, the yams should be soft and tender. Roll them in a kitchen towel to soften the skin. Cut a cross into one end of the yam and peel the skin back. Mash up the yams in a medium sized mixing bowl with the butter and juice. Spread the mixture evenly in a baking dish.
Chop the pecans into small pieces. In a separate bowl, mix together the pecan pieces, maple syrup, cinnamon and a pinch of salt. Spread the pecan mixture over the top of the yams in the baking dish. Bake the yams for approximately 40 minutes at 400 degrees Fahrenheit until the pecans are toasted.
