For a delicious, simple baked cod, gather four relatively thick cod fillets (approximately 6-8 ounces), 1/2 cup fresh parsley, 2-3 garlic cloves, 3/4 teaspoon salt, 1 1/2 cups breadcrumbs, olive oil and zest of one lemon. Place in lined and greased baking dish, and cook for 10 to 12 minutes.
Cut parsley and garlic into desired size pieces on the cutting board, along with the zest of the lemon. Remember that the intensity of garlic flavor corresponds to how finely it's cut; the finer it is, the more intense. Next combine these three ingredients, along with the breadcrumbs, in a shallow plate and set aside. Preheat the oven to 400 degrees Fahrenheit, and prepare the baking dish by lining it with aluminum foil. Brush the foil lightly with olive oil, or coat thinly with a non-fat cooking spray.
Drizzle cod fillets with olive oil, then coat each side with the breadcrumb mixture. At this stage, it is important to monitor what surfaces the raw protein touches to avoid cross-contamination. Once the fillets are coated, lay them in baking dish and place it inside the oven. While 10 to 12 minutes is a solid estimate, the cooking time ultimately depends on the thickness of the fish. Finished fish is firm to the touch and has no translucency whatsoever. Finally, remove fully-cooked fish from the oven and present them with lemon wedges. This recipe serves approximately four people.
