Avocado Baked Eggs
This recipe works well on a baking sheet or muffin tin and can be adapted to feed two people or a whole group.

- 1 avocado halved with pit removed
- 2 eggs
- salt and pepper
- 1/4 cup cooked bacon, crumbled
- 1 tablespoon chopped chives
- 1 pinch cayenne pepper
- Preheat the oven
- Prepare the avocados
- Bake the egg
- Garnish and serve
Preheat the oven to 425 F.
Set each avocado half on a baking sheet or in a ramekin. Some of the avocado meat may be removed to make a large hole for the egg to completely fit. Crack one egg into each half and season with salt and pepper. If desired, sprinkle each half with cayenne pepper.
Bake in the oven for 15 minutes or until the egg is cooked through.
When the egg is cooked, remove the avocado halves from the oven. If desired, garnish with the bacon crumbles and chopped chives. Serve hot.
