To make Food Network's recipe, boil a large pot of salted water. Trim 4 artichokes, and cut the base off of each. Remove some of the bottom leaves, and trim the sharp points from the outer leaves. Boil the artichokes, and squeeze the juice of 4 lemons into the water. Add the lemon peels in as well. Cook for 30 minutes, and let cool.
In a bowl, combine 10 ounces mild Gorgonzola, 2 tablespoons cream, 2 teaspoons chopped fresh thyme leaves, 2 teaspoons chopped fresh parsley leaves, 1 minced garlic clove, salt and 1/2 teaspoon freshly ground black pepper. In another bowl, combine 3 tablespoons bread crumbs and 1 tablespoon olive oil.
Preheat the oven to 400 degrees F, and remove the center of the artichokes. Stuff the cheese mixture into the middle, and place on a baking sheet. Sprinkle the bread crumbs onto the artichokes, and drizzle with olive oil. Bake for 25 minutes, or until the artichokes are heated through and the bread crumbs are golden.Learn more about Vegetables
