A good recipe for bacon-wrapped dates is bacon-wrapped dates stuffed with cream cheese and almonds. All you need is pitted dates, almonds, cream cheese and bacon.
Cut a package of cream cheese into 18 1 by 1/4-inch pieces, and place them in 18 pitted dates along with 18 salted and roasted whole almonds. Cut 6 slices of bacon into three pieces each, and wrap 1 piece around each date, securing the bacon to the date with a toothpick. Place the bacon-wrapped dates on a baking pan, and cook them at 400 F for 5 minutes on each side.
Another recipe calls for 2 ounces of shelled, salted whole pistachios and 2 ounces of dried apricots. Cut the dried apricots into 32 pieces, and slide 1 piece along with 3 pistachios into each of 32 pitted dates. Wrap the dates in thinly sliced and cut bacon, and cook them at 400 F for 10 minutes on each side.
To make a blue cheese stuffing for the dates, combine 2 tablespoons of heavy cream and 1/2 cup of blue cheese. Spoon the mixture into the dates and wrap them with bacon. Bake the dates until the bacon turns crispy at 400 F.
