A good recipe for amaretto cake is Duncan Hine's amaretto cake that uses a yellow cake mix in addition to instant pudding mix, amaretto liquor, eggs and almond extract. Another good recipe is amaretto-almond pound cake.
Make the pound cake recipe by creaming together 1 1/4 cups of softened butter and 1 3-ounce package of softened cream cheese at medium speed. Slowly beat in 2 1/2 cups of sugar, 3 tablespoons of almond liqueur and 1 tablespoon of vanilla extract. Gradually add in 2 1/2 cups of all-purpose flour and 6 eggs, a little at a time. Grease and flour a Bundt pan, and layer the bottom with 1/3 cup of sliced almonds before pouring in the cake batter. Bake the cake at 325 degrees Fahrenheit for 65 to 70 minutes.
While the cake bakes, pour 3/4 cup of sugar, 6 tablespoons of butter, 1/4 cup of almond liqueur and 2 tablespoons of water into a saucepan for the amaretto glaze. Bring the mixture to a boil at medium heat, and continue to cook at medium-low heat for another three minutes. Slowly pour the glaze of the cake while it's still hot so that it soaks into the bread, and then cool the cake for 90 minutes before serving.
