A good ramen noodle slaw recipe is to whisk together canola oil, rice vinegar, a little honey and the ramen seasoning packet to make a dressing and then toss the dressing with a bag of coleslaw mix and a crushed package of ramen noodles. Chopped peanuts provide a nice garnish.
The dressing consists of 1/2 cup of canola oil, 1/4 cup of rice vinegar, 2 tablespoons of honey and the seasoning packet from one package of oriental flavored ramen noodles mixed together in a large bowl. Whisking the mixture well dissolves the seasonings and removes all lumps.
Placing the ramen noodles in a large, re-sealable bag minimizes the mess during the crushing process, and a few strikes with a rolling pin quickly breaks the noodles down into bite-sized pieces. The noodles go into the dressing in the bowl followed by a 16-ounce bag of coleslaw mix with cabbage and carrots. All of the ingredients get tossed gently to combine. Sprinkling 1/2 cup of chopped peanuts on top finishes the dish.
This recipe makes four to six servings and takes about 15 minutes to prepare. It is a good choice for a side dish for a barbecue or a unique salad for a potluck dinner.
