Quinoa is a good ingredient for salads, especially when combined with ingredients, such as cucumber, red onion, avocado, tomato and olive oil. Adding salt, black pepper and herbs, such as parsley, with these ingredients is just one example of a simple yet tasty quinoa salad.
While most salads are cold, a tasty warm quinoa salad also brings this ingredient to life.
Fry a red onion, chili, garlic, and coriander in a pan with olive oil with some cumin to form a tasty base for the warm salad. While this is cooking, follow the instructions on the packet to cook the quinoa.
Green beans, peas, or broad beans can also be added to make an extra healthy meal. Simply blanch the vegetables for a few minutes, and then set aside to add later.
Once the quinoa is cooked, combine the fried onions, chili, garlic and coriander, along with the optional vegetables.
Crumble feta cheese in for extra flavor. The cheese can also be lightly fried in a pan with olive oil (ideally until a golden brown color), before being broken up and added to the rest of the salad.
A drizzle of lime juice can give this recipe an extra zesty kick as well, and chili sauce can be added for some additional heat.
