To make Emeril Lagasse's potato chip cookies, make a chocolate sauce by simmering 1/2 cup heavy cream and pouring it over 4 ounces chopped semi-sweet chocolate. Let the mixture sit for two to three minutes, and then whisk it until it is smooth. Mix in 1 teaspoon vanilla extract.
For the cookies, cream together 1 cup butter, 1/2 cup sugar and 1 teaspoon vanilla extract. Mix in 1/2 cup toasted pecans and 1/2 cup crushed potato chip crumbs. Stir in 2 cups all-purpose flour. Form the dough into small balls 1 tablespoon at a time, and set them on a baking sheet. Dip a glass in sugar, and press the cookies flat. Bake the cookies at 350 degrees Fahrenheit for 14 to 16 minutes. Cool the cookies, then dip one side of each cookie in the chocolate sauce. Allow the chocolate to harden before serving.
For Carla Hall's version from the show, "The Chew," sprinkle the cookies with powdered sugar before pressing them flat. After dipping them in melted chocolate chips, dip them again in the potato chip crumbs.
