Some good pork pie recipes are Tourtiere de Fleur-Ange, Michael Symon's Pork Pie and Raised Pork Pie. Raised Pork Pie is a thick English pie made from pork shoulder, pork belly and bacon.
To make Tourtière de Fleur-Ange place 2 pounds of lean ground pork in a pan, and add 1 cup of water, 1 cup of chopped celery, 1/2 cup of chopped celery leaves, 2 chopped onions and 2 chopped garlic cloves. Season with 1/2 cup of chopped fresh parsley, 1 tablespoon of chopped fresh savory, 1 pinch of ground cinnamon, 1 pinch of ground cloves and salt and pepper to taste. Stir all the ingredients, and cook for 30 minutes.
Meanwhile roll out 2 ready-made or homemade double pastry crusts. Place the bottom crusts in two pie plates, fill the plates with the cooked meat mixture, and add the top crust. Seal the edges of the top and bottom crusts together, add a few sits in the top crust to help vent heat, and brush the top with a beaten egg-and-milk mixture. Bake at 400 degrees Fahrenheit for 35 to 40 minutes. Another recipe calls for adding 1 pound of peeled and diced russet potatoes to the pork filling.
