A tasty pork loin marinade that combines sweet and savory ingredients into a robust flavor uses soy sauce, bourbon, brown sugar and garlic. Mix one-quarter cup of soy sauce, one-quarter cup of bourbon, 2 tablespoons of brown sugar and 2 cloves of garlic in a shallow baking dish.
Add a 3-pound pork loin and refrigerate for two hours. Pre-heat the oven to 325 degrees Fahrenheit and remove the pork from the marinade. Place the meat on a baking rack and cook for 45 minutes. Baste the loin frequently with the excess marinade for moistness. Use a meat thermometer to check the roast until it reaches 145 degrees Fahrenheit. Remove from the oven and let rest for 10 minutes or until the pork’s center reaches 120 degrees Fahrenheit. This cuts down on the loss of juices when carving.
