A good pork injection recipe requires 1 cup of apple juice, 1/4 cup of cider vinegar, 2 tablespoons of Worcestershire sauce, 1 1/2 teaspoons of pork rub and 2 tablespoons of corn syrup. Use the same pork rub that is applied to the outside of the meat for the injection recipe. Grind up the pork rub using a mortar and pestle before adding it to the liquid. The injection fluid should also include 1/4 cup of water to help the flavor percolate through the meat.
Another good pork injection recipe calls for 1 cup of apple juice, 1 cup of water, 1/2 cup of brown sugar, 1/2 cup of salt, 1 tablespoon of soy sauce and 1 tablespoon of Worcestershire sauce.
Completely fill an injection needle with the fluid. Insert the needle into the meat, and press down on the plunger to inject the fluid. Don't inject all of the fluid into one spot. Rather, pull the injection needle halfway out of the meat, and reinsert it at a different angle. Continue until all of the fluid has been injected into the meat. Repeat this process at another spot on the meat.
After injecting the meat, let it marinate in a Ziploc bag for at least four hours before barbecuing it.
