Make colorful and tasty popcorn balls using four simple ingredients: 1 3-ounce package of Jell-o in any flavor, 1/4 cup butter or margarine, 1 10.5-ounce package of miniature marshmallows and 12 cups of popped popcorn. This recipe takes about 15 minutes to make and yields 16 servings.
Microwave the butter and miniature marshmallows on high in a large, microwave-safe bowl for 1 1/2 to two minutes until the marshmallows look puffy. Stir in the Jell-o mix until completely blended. Place the popcorn into a very large bowl, and pour the gelatin mixture over it. Toss the popcorn to coat it well. With greased hands, form 16 balls. Let them cool completely before eating.
Another slightly more involved recipe calls for setting aside 6 cups of popped popcorn in a large microwaveable bowl. In another microwave-safe container, combine 1/3 cup sugar, 1 3-ounce package Jell-o, 2 tablespoons light corn syrup, 1/2 cup butter or margarine and 1/8 teaspoon salt. Microwave on high for two minutes, and stir. Microwave again on high for one to two minutes longer until the mixture comes to a rolling boil. Stir in 1/4 teaspoon baking soda. Pour this mixture over the popcorn immediately, and mix well. Microwave on high for one minute, and cool for two minutes. With buttered hands, form six balls.
