Some good pomegranate salad recipes are the Spinach Salad with Pomegranate and Avocado and the Fennel and Endive Salad with Pomegranate Seeds and Walnuts. Make the first recipe by cutting a single pomegranate in half and removing the seeds in a bowl of cold water.
After all of the seeds have been removed, the membrane floats to the surface of the water where it can be easily removed.
Combine 3 tablespoons of lemon juice, 1 teaspoon of Dijon mustard and 2 tablespoons of olive oil in a bowl. Add course salt and pepper to taste. The Fennel and Endive Salad with Pomegranate Seeds and Walnuts recipe calls for two fennel bulbs, 1/4 cup of fennel fronds, 1 pound of Belgian endive, 1/2 cup of pomegranate seeds, 1/2 cup of chopped toasted walnuts, 1/3 cup of olive oil, 2 tablespoons of fresh lemon juice, 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Slice the fennel and endive and arrange them on a platter along with the walnuts, pomegranate seeds and fronds. Whisk together the oil, lemon juice, salt and pepper, and pour it over the salad.
