Fresh blueberry waffles is a good Pinecrest recipe. Mix together 1 3/4 cup of flour, 1 tablespoon of baking powder, 1 tablespoon of sugar, 1/2 teaspoon of salt, 3 eggs, 1 stick of butter and 1 1/2 cup of milk. Mix in fresh blueberries and ladle into waffle maker.
Another good Pinecrest recipe is vegan hash with egg. Wash and cube 2 1/2 lbs of small potatoes, drizzle them with olive oil and sprinkle them with salt and pepper. Bake them on a baking sheet for 35-45 minutes at 425 degrees. Sauté 2 small sliced onions, 1 diced red pepper, 2 minced cloves of garlic and several sprigs of chopped thyme in olive oil. Once the onions are soft add in 8 ounces of mushrooms. Add in one bunch of baby kale after the mushrooms are cooked. Once the kale is wilted, stir in the potatoes. Serve with a fried or poached egg on top and with slices of avocado and tomato.
Local zucchini bread is another good Pinecrest recipe. Combine 3 eggs, 2 cups of grated zucchini, 1 cup of oil, 1 tablespoon of vanilla, 2 cups of sugar and 1 teaspoon of salt. Mix in 2 1/2 cups of flour, 1 teaspoon of baking soda, 1 teaspoon of baking powder, 1 tablespoon of cinnamon and 1 cup of chopped pecans. Pour mixture into loaf pans, and bake for an hour at 350 degrees.
