Two good pimento cheese recipes include Food Network's Bobby's Pimento Cheese and AllRecipes.com's Southern Pimento Cheese. Both recipes use similar ingredients, but the Southern Pimento Cheese recipe provides the option to make a spicier pimento cheese.
For Food Network's Bobby's Pimento Cheese recipe, beat together 3 ounces of room temperature cream cheese until smooth. Add 1 cup grated sharp cheddar cheese and grated Monterey Jack cheese, 1/2 cup mayonnaise, 2 to 3 tablespoons smashed pimentos, 1 teaspoon grated onion and pepper. Make house seasoning by combining 1 cup salt, 1/4 cup pepper and 1/4 cup garlic powder. Use 1/2 teaspoon of house seasoning in the cheese mixture. Blend all ingredients together.
To make AllRecipes.com's Southern Pimento Cheese, mix together 2 cups shredded sharp cheddar cheese, 8 ounces softened cream cheese, 1/2 cup mayonnaise, 1/4 teaspoon garlic powder and onion powder and a 4-ounce jar of diced pimento with a paddle on medium speed. For a spicier spread, add in 1/4 teaspoon cayenne pepper and a seeded and minced jalapeño before mixing. Season with salt and pepper. For another flavor variation, add Worcestershire sauce and mustard.
