One good phyllo dough pastry recipe is apple phyllo strudel. Another is a simple phyllo dessert featuring a flaky phyllo roll complemented by chocolate, fresh bananas and cinnamon.
To make apple phyllo strudel, combine 4 sliced golden delicious apples, 1/3 cup of ground almonds, 1/4 cup of liquid honey, 1/2 teaspoon of grated lemon zest and 1 tablespoon of lemon juice in a large bowl. Set this aside, and place a sheet of phyllo dough on your work surface, and then brush the sheet with butter. Place 1/4 of the apple mixture along the shorter edge of the sheet, and then fold the dough over from the longer side. Roll up the edges to seal the dough, and repeat with the remaining dough sheets. Brush the filled sheets with butter, and then make six diagonal cuts in each. Bake the pastries on a parchment-lined baking sheet for 35 to 38 minutes at 350 degrees Fahrenheit.
To make the simple phyllo dessert, place 3 sheets of phyllo dough on top of one another on a large and lightly greased baking pan. Brush some oil on the dough, and then sprinkle the dough with up to 2 cups of chocolate chips or chocolate bar pieces, 1 to 2 finely sliced bananas and some cinnamon and nutmeg to taste. Roll the dough up, brush the roll with oil, and bake it for 8 to 10 minutes at the temperature indicated on the phyllo package. Sprinkle with confectioner's sugar, and slice before serving.
