Some good Philly cheese steak recipes are available from the Food Network and Cooking Light. To cook this recipe, you need strip loin or flank steak, sautéed mushrooms and peppers, caramelized onions and provolone sauce.
To make the Food Network's version of the recipe, slice 2 1/2 pounds of strip loin into thin pieces, and toss the meat with olive oil and salt and pepper to taste. Cook the meat on a grill pan or griddle for 45 to 60 seconds on each side.
Next, combine 2 tablespoons of olive oil and 1 tablespoon of butter in a pan at high heat, and add 1 1/2 pounds of coarsely chopped mushrooms until they turn golden brown. Remove them from the heat, and season them with salt and pepper to taste and 3 tablespoons of minced parsley leaves. Follow the same process to sauté 2 poblano and Cubano peppers each. Finish by caramelizing 3 thinly sliced Spanish onions in 2 tablespoons of butter and 1 tablespoon of canola oil over medium heat for 30 to 40 minutes.
Layer the meat and vegetables in hoagie buns drizzled with a provolone sauce that is made by cooking 1 tablespoon of butter, 1 tablespoon of flour, 2 cups of heated whole milk, 1 cup of grated provolone cheese and 1/4 cup of grated Parmesan in a saucepan. Another recipe adds 1/4 teaspoon of dry mustard to the sauce.
