To make the Food Network's version of the recipe, slice 2 1/2 pounds of strip loin into thin pieces, and toss the meat with olive oil and salt and pepper to taste. Cook the meat on a grill pan or griddle for 45 to 60 seconds on each side.
Next, combine 2 tablespoons of olive oil and 1 tablespoon of butter in a pan at high heat, and add 1 1/2 pounds of coarsely chopped mushrooms until they turn golden brown. Remove them from the heat, and season them with salt and pepper to taste and 3 tablespoons of minced parsley leaves. Follow the same process to sauté 2 poblano and Cubano peppers each. Finish by caramelizing 3 thinly sliced Spanish onions in 2 tablespoons of butter and 1 tablespoon of canola oil over medium heat for 30 to 40 minutes.
Layer the meat and vegetables in hoagie buns drizzled with a provolone sauce that is made by cooking 1 tablespoon of butter, 1 tablespoon of flour, 2 cups of heated whole milk, 1 cup of grated provolone cheese and 1/4 cup of grated Parmesan in a saucepan.
