Good pecan turtle candy recipes are available at TasteofHome.com and SheWearsManyHats.com. Taste of Home's recipe is made using sweetened condensed milk, whereas She Wears Many Hat's candy is made with caramels.
To make Taste of Home's recipe, grease a pan with 1 teaspoon of butter. Cube 1 cup of butter and place the cubes in the pan, along with 1 cup of light corn syrup, 2 1/4 cups of brown sugar and 1/8 teaspoon of salt. Cook until sugar is melted and slowly stir in 14 ounces of sweetened condensed milk. Bring to a boil over medium heat, and cook and stir until the mixture reaches 248 F.
Remove from heat and add 1 teaspoon of vanilla and 1 1/2 pounds of toasted pecan halves. Drop rounded teaspoonfuls of the mixture onto baking sheets lined with greased waxed paper. Refrigerate for 12 minutes. Melt 4 teaspoons of shortening and 3/4 cup each of milk and semisweet chocolate chips, and drizzle over the clusters. Chill until firm.
To make She Wears Many Hat's recipe, lightly salt 4 cups of pecan pieces and toast them for 25 to 30 minutes at 250 F. Melt 14 ounces of caramels using a microwave, and mix them with the toasted pecans. Cool slightly, and drop tablespoonfuls of the mixture onto a greased baking sheets. Let cool.
Melt 10 ounces of chocolate chips using a microwave, and top each turtle with 1 tablespoon of chocolate. Sprinkle with salt and let cool.
