A good pecan pie recipe is Betty Crocker's Decadent Pecan Pie which includes sugar, butter, corn syrup, eggs, salt and pecans, in addition to a homemade pastry crust. It requires 20 minutes of active preparation time and 3 hours and 55 minutes of total preparation time. It makes 8 servings.
Mix 1 cup all-purpose flour with 1/2 teaspoon salt in a medium mixing bowl. Using two knives, cut in 1/3 cup plus 1 tablespoon of shortening. Drizzle 1 tablespoon cold water over the mixture, and use a fork to mix it in. Repeat until the flour mixture is moistened and a dough begins to form, 2 to 3 tablespoons of cold water total.
Form the dough into a ball, wrap in plastic wrap and refrigerate for 30 minutes, until cold and firm. Use a floured rolling pin to roll the dough flat on a lightly-floured surface. Fold in half or fourths. Unfold and press into a 9-inch pie pan. Let the dough overhang and trim 1 inch from the outer edge of pie plate, and fold it under itself.
Preheat oven to 375 degrees Fahrenheit. In a medium bowl, use a whisk or a hand mixer to combine 2/3 cup sugar, 1/3 cup melted butter, 1 cup corn syrup, 1/2 teaspoon salt and 3 eggs. Add 1 cup pecan halves. Pour the mixture into the prepared pastry crust and cover the pastry edge with aluminum foil to prevent burning. Bake for 25 to 35 minutes, remove the aluminum foil and then bake for an additional 15 minutes. Refrigerate for 2 hours before serving.
