Some good patty melt recipes include Bon Appetit's BA patty melt, using caramelized onions, beef chuck, Swiss and cheddar cheeses, and rye bread, and the Food Network's version, using just a few ingredients, such as ground beef, onions and Worcestershire sauce. Another good recipe is the classic patty melt.
Make Bon Appetit's patty melt by caramelizing the onions in 2 tablespoons of vegetable oil over medium heat for 20 to 25 minutes. Once the onions turn a deep golden brown, remove them from heat. Add the caramelized onions, 1 pound of ground beef chuck, 1 tablespoon of ketchup and 1/2 teaspoon of garlic powder in a bowl. Season with 1 teaspoon of kosher salt and 1/4 teaspoon of freshly ground black pepper. Mix everything together, and press into four patties. Fry the patties in a skillet over medium-high heat.
Spread mayonnaise on 8 slices of seeded rye bread. Placing the bread mayo-side down in the skillet, add a slice of sharp cheddar, the beef patty, caramelized onions and a slice of Swiss cheese before topping with the other piece of bread mayo-side up. Cook on each side for three minutes, until the cheese melts and bread browns. Another option is to replace the mayonnaise with Thousand Island dressing, with extra for dipping.
