Make Bon Appetit's patty melt by caramelizing the onions in 2 tablespoons of vegetable oil over medium heat for 20 to 25 minutes. Once the onions turn a deep golden brown, remove them from heat. Add the caramelized onions, 1 pound of ground beef chuck, 1 tablespoon of ketchup and 1/2 teaspoon of garlic powder in a bowl. Season with 1 teaspoon of kosher salt and 1/4 teaspoon of freshly ground black pepper. Mix everything together, and press into four patties. Fry the patties in a skillet over medium-high heat.
Spread mayonnaise on 8 slices of seeded rye bread. Placing the bread mayo-side down in the skillet, add a slice of sharp cheddar, the beef patty, caramelized onions and a slice of Swiss cheese before topping with the other piece of bread mayo-side up.
