Sandra Lee's recipe for pan fried tilapia involves dredging tilapia fillets in seasoned flour and frying the fillets in a skillet. The tilapia fillets are dressed with a garlic lemon butter sauce. The recipe is available on FoodNetwork.com.
Preheat an oven to 300 F. Combine 1/4 cup of all-purpose flour, 2 teaspoons of seafood seasoning and 1 teaspoon of salt in a shallow baking dish, mixing the ingredients together well. Add 1 1/2 pounds of fresh tilapia fillets to the flour, lightly coating each side. Shake off any excess seasoned flour.
Heat 2 tablespoons of canola oil over medium-high heat in a large skillet. Place the fillets in the skillet, and cook for about 2 to 3 minutes on each side until they are browned. Remove the tilapia fillets from the skillet, and reserve on a baking sheet lined with paper towels or a paper grocery bag. Place the baking sheet in the oven to keep it warm.
Reduce the heat on the skillet to low and add 2 tablespoons of butter. After the butter melts, add 1 teaspoon of chopped garlic, 2 tablespoons of fresh lemon juice and 2 tablespoons of freshly chopped parsley leaves. Saute for two minutes.
To serve, place the fillets on a serving plate, and top with the sauce.
