A good nut roll recipe uses milk, eggs, sour cream and dry yeast and contains a filling made with ground walnuts and cinnamon. The recipe yields six to seven rolls.
To make it, mix together 1 cup of sugar, 1/4 teaspoon of salt, 1 cup of melted butter and 3 eggs in a large bowl. Add a 1/2 pint of sour cream, and mix. In another bowl, mix 1 ounce of active dry yeast, 1/2 cup of warm milk and 1 teaspoon of sugar, and add it to the first mixture. Add 7 cups of flour, mix and knead, and divide the dough into seven equal parts.
For the filling, melt 1 cup plus 3 tablespoons of butter. Add 2 cups of sugar, and stir until it dissolves. Add the mixture to 2 1/2 pounds of ground walnuts, and mix until they're coated. Add 1 teaspoon of ground cinnamon and 1 teaspoon of vanilla extract to taste, and divide the filling into seven equal amounts.
Roll each ball of dough into a rectangle, and use 2 slightly beaten egg whites to spread on top of the dough. Spread an equal amount of the filling on each rectangle, roll in the edges of the dough, and spread them with egg whites to seal. Brush the tops with egg whites. Bake the rolls in an oven preheated to 350 F for 30 minutes, or until they brown lightly.
