A good recipe using Nilla wafers is the Original Nilla Banana Pudding recipe using eggs, milk, flour, vanilla and sugar to create a base custard. Add in sliced ripe bananas and layer the custard in a bowl with Nilla wafers. Allow the pudding to chill for a few hours before eating.
To start making the original banana pudding recipe, separate 3 eggs. Mix together the 3 egg yolks, 1/2 cup of sugar and 1/3 cup of flour in the top of a double boiler. Add a dash of salt and 2 cups of milk. Cook over boiling water for 10 to 12 minutes. Remove from heat and add 1/2 teaspoon of vanilla.
Place a small amount of the custard on the bottom of a casserole dish, and cover with a layer of Nilla wafers and then a layer of thinly sliced bananas. Pour 1/3 of the remaining custard over the bananas. Continue with a second and third layer, ending with custard on top.
Beat the egg whites until soft peaks form and add 1/4 cup of sugar. Beat until stiff and spread over the top of the pudding. Bake at 350 F for 10 to 15 minutes or until just lightly golden brown. Garnish with additional Nilla wafers and bananas, if desired. Chill before serving.
