The Nesco website contains nearly 400 recipes for varying sizes of Nesco roaster ovens. One recipe that was well liked and re-posted to Food.com is for roast pork. The roast pork recipe is intended for a 12- or 18-quart roaster oven.
To make Nesco's roast pork recipe, lightly grease the roaster with oil. Preheat to 400 degrees Fahrenheit while melting 2 tablespoons of butter. Place the pork roast in roaster, cover and cook for 10 minutes, then reduce the temperature to 325 degrees Fahrenheit. In a separate bowl, mix together 1 tablespoon of brown sugar, 2 tablespoons of Dijon mustard, 1 teaspoon of Thyme and 1/2 tablespoon of black pepper. Remove the rack with the meat from the roaster, spread mixture on the roast, and place it back in roaster. Cook for 2 to 2 1/2 hours, until internal temperature of the meat reaches 170 degrees Fahrenheit.
One popular recipe intended for a smaller 4-, 5- or 6-quart roaster oven is cheesy potluck potatoes. To prepare this recipe, preheat a roaster oven to 275 degrees Fahrenheit and add 1 cup of chopped onion and 1/4 cup of butter or margarine. Next, add one 32-ounce package of frozen hash browns, thawed; a 10.75-ounce can of cream of celery soup; a 16-ounce container of sour cream; a dash of black pepper; and 1 cup of shredded cheddar cheese. Mix all the ingredients together and cook for 90 minutes, stirring once halfway through. Add the rest of the cheese and cook for five more minutes, until cheese is melted.
