One good nachos supreme recipe involves tortilla chips, ground beef, refried beans, fresh tomatoes, lettuce, green and white onions, jack cheese, jalapeos, black olives, sour cream and garnishes. Variations include black beans, Spanish rice, guacamole, salsa and queso dip.
While some chefs make nachos supreme from scratch, it is a very easy and colorful dish that can be made using some canned and packaged products. One easy way to add color is to use yellow or blue corn chips. Another variation is to cut up and toast specialty tortillas such as those made from flax, quinoa and rice for custom shapes and sizes.
First, prep the fresh vegetables. Dice generous amounts of white and green onions, tomatoes and iceberg lettuce. Next shred about a pound of jack cheese (or a variation such as cheddar or queso fresco). To add heat, slice fresh jalapeos, or for a more mellow flavor, used canned. Last, slice about a cup of black olives.
Next, set out the tortilla chips on a large baking tray, and set aside. Brown a pound of ground beef in olive oil and season with salt, pepper, paprika and chili powder to taste, or use packaged taco or fajita spices. While the meat is browning, spread canned refried beans generously onto the tortilla chips.
Spoon the cooked meat over the refried beans, and add your toppings. Bake the nachos at 375 degrees Fahrenheit until the cheese is melted and bubbly. Garnish with cilantro, fresh lime juice, red pepper flakes and chili sauce.
