In a large bowl, mix together 2 cups of mincemeat,1/3 cup of brown sugar and 1/3 cup of brandy. Peel and chop one apple, chop 1/2 cup of Calimyra figs and chop 1 1/2 cups of pecans. Add the fruit and nuts to the mincemeat mixture. Grate 2 teaspoons of lemon peel, and add it to the mincemeat mixture. Stir the mixture to blend it well, cover and refrigerate overnight.
Prepare two pre-made refrigerated pie crusts according to package directions for a 9-inch pie. Remove the mincemeat mixture from the refrigerator, and allow it to rest at room temperature for 30 minutes. Spoon the mixture into the prepared pie crust, top with the second crust and cut slits into the top crust to allow the pie to vent.
Bake the mincemeat pie for 40 to 45 minutes on the lowest rack of an oven heated to 425 degrees Fahrenheit. Remove the pie from the oven when it is golden brown, and allow it to cool completely on a pie rack before serving.Learn more about Desserts
