Buttermilk spice muffins is a good muffin recipe from Mimi's Cafe. The recipe makes 12 servings, takes five minutes to prepare and features a cook time of 20 to 25 minutes.
To prepare the recipe, cream 1/2 cup butter or margarine with 1 cup sugar with an electric mixer while preheating the oven to 375 degrees Fahrenheit. Add 3 eggs to the mixing bowl, and beat for an additional minute. In a separate mixing bowl, sift together 2 1/2 cups flour, 2 teaspoons baking soda, 1 teaspoon nutmeg and 1/2 teaspoon cinnamon. Add the flour mixture to the wet mixture little by little along with 3/4 cup plus 1 tablespoon of buttermilk, mixing at a low speed.
In another bowl, make the nut topping by combining 1 cup finely chopped walnuts, 1/2 teaspoon nutmeg, 1/2 teaspoon cinnamon and 1/2 cup sugar. Grease a muffin pan or use paper cups, and fill them three-quarters full with batter. Add a rounded tablespoon of nut topping over each muffin, placing the pan into the oven immediately to prevent the topping from sinking into the batter. Bake for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. If baking jumbo muffins, increase baking time by five to 10 minutes, and reduce the oven temperature by 25 degrees.
